Whatever speed was reported (up to 50Mbps down) was likely still during the testing phase and can change. The issue on ships was rarely pure speed (4 Mbps Stream on both old geo sat service and O3B was fine for streaming video) it was the latency that killed performance. That's one of the main things Starlink will address.
That is very much a YMMV thing and the few times it happened, they didn't bother with a coffee card like yours - just being D and up got you a limited coffee selection at the coffee shop.
The T in MTD stands for time, not table. They have all kinds of criteria for seating folks which probably varies by the day (and which could bump you from your usual table), but the default is to keep you in the same general area. If lucky, you may get the same table for the whole sailing, but don't count on it.
If food availability at that time is a criterion, sail those lines or other ships in the RCI fleet. The venue operating hours are listed in the RCI app.
