  1. Our ship will arrive in Castro, Isla Chiloe, Chile on my birthday in February. Can anyone recommend a place for lunch near the cruise ship port?
  2. Happy Friday! In honor of National Bird Day, here are a few pictures of a pair of peregrine falcons that hitched a ride across the Atlantic on the Oosterdam in October. We first spotted them in the sky a few days after we left the Azores. After a few sea days, they decided to come aboard. As we sailed closer to HMC, they even began to use the verandah. Sending you peace, healing and all good wishes.
  3. No personal experience but on one of the recent Grand South America blogs that they were unable to send out laundry for several days when they were actually in the Amazon because of the silt in the water (or was it the low water levels of the river)?
  4. I am also interested in the embarkation procedure in Buenos Aires as I will be boarding the Oosterdam on January 29.
  5. Lamar will not be playing Saturday but I have confidence in Snoop. The weather forecast is snow, turning to rain. It will be a messy game! Glad you will be able to see it. I’m interested in your comments on the daytime onboard activities. Thank you for taking us along.
  6. I am 3 star and was on the Rotterdam TA in October, I received an invitation to the Mariners lunch and a cocktail party by the Lido pool for 3 star and above.
  7. @NorbertsNieceWhat tour did you take in Punta Arenas? Because of a change in our itinerary, HAL is still not showing any tours for the port. Many people on your Roll Call seem unhappy with the tours they took. I wanted to take a tour to see the penguins on Magdalena but private tours leave before the ship arrives. I was waitlisted for the ship's tour prior to the change in itinerary, I would be happy to tour the historic ships and museums but would prefer a smaller group. TYIA
  8. Goulash is a soup or stew of meat and vegetables seasoned with paprika and other spices. It is one of the national dishes of Hungary and a symbol of the country. Authentic Hungarian Goulash (Gulyás) - The Daring Gourmet An authentic Hungarian Goulash recipe with a depth and richness of flavor. Hungarian goulash is NOT made with ground beef or macaroni noodles. Goulash is kind of in between a soup and a stew. Unlike some stews, Goulash is not overly packed full of beef and vegetables, it is a little more brothy. But through the cooking process, the broth becomes a little thicker and very rich in flavor. To achieve the ultimate flavor, the cooking method is important and quality, Hungarian paprika is essential. Hungarians use very generous amounts of paprika, and that’s key. For this size batch of Goulash, you want to use a full 1/4 cup of it. It is recommended that you use genuine imported Hungarian paprika imported from Hungary. There is no comparison; it is extraordinarily rich in flavor and has an exceptionally vibrant red color. Hungarian Goulash - Spend With Pennies This delicious dish is warm and comforting, perfect for a cold weather day. It is suggested that you serve it over noodles or with a side of bread to sop up any of the broth left in your bowl. Hungarian Goulash Recipe - BettyCrocker.com Is this the recipe your Mom used to make? This version is served over a plate of freshly cooked egg noodles for a hearty comfort food. Sending you peace, health and all good wishes.
  9. I want to know the good, the bad and the ugly! It will help me plan for my cruise next January. Happy New Year!
  10. Chicken Divan is a casserole usually served with broccoli and Mornay sauce (which is a béchamel sauce with shredded cheese added). (Béchamel sauce is made from roux and milk…are you getting confused?) It was named after the place of its invention, the Divan Parisien Restaurant at Chatham Hotel in New York City where it was served as the signature dish in the early twentieth century. Easy Chicken Divan - Spend With Pennies This easy divan recipe is very similar to the one my Mom used to make. Chicken and broccoli are mixed with a rich and creamy sauce then baked until all warm and bubbly. Chicken Divan - The Cozy Cook This recipe has juicy bites of chicken that are smothered in a simple cream sauce with broccoli and topped with a buttery Ritz cracker topping. The thing I like best about the recipe is you can make the soup from scratch or use a can of cream of chicken soup. Easy Chicken Divan - Skinnytaste This lightened up Chicken Divan made from scratch with no canned soups. Just layers of tender chicken breast and broccoli in a flavorful creamy, cheese sauce topped with golden breadcrumbs. Sending you peace, healing and all good wishes.
  11. Sweet potatoes are nutritious, packing a good amount of vitamin A, vitamin C, and manganese into each serving. They also have anticancer properties and may promote immune function and other health benefits. Some consider sweet potatoes a “superfood”. They are “good” carbs, often called “complex carbohydrates.” When I was a child, my mother gave me raw sweet potato and peanut butter, a snack which I still enjoy today. I frequently wash and roast whole sweet potatoes. Does anyone really need a recipe for that? Just in case, Smashed Sweet Potatoes Recipe | Ina Garten | Food Network roasts the potatoes, adds some yummy seasonings and makes a casserole. Here is a recipe that dices the potatoes before roasting Roasted Sweet Potatoes - Chelsea's Messy Apron. It contains a great deal of useful information about selection, peeling and dicing and offers a spice mix that sounds delicious. Here’s a recipe for Air Fryer Whole Baked Sweet Potato This simple method for air frying a sweet potato is quicker than the oven since you don’t have to preheat the air fryer like you do an oven and the sweet potatoes come out perfectly – fluffy in the center with crisp skin.
  12. Doable! Just wear your “winter” coat and boots on the plane. Now you better start looking for excursions; there are emails for a few companies on the spreadsheet in my signature 🐧🐧🐧

  20. I appreciate all the wonderful information you provide and am excited to follow along on your next adventure. Previously, someone posted “art” tours of the various ships. Was it you? If it was could you repost the link. I am specifically looking for the Oosterdam.

  22. As we prepare to enter 2024, it’s time to make a fresh start, to tackle those New Year's resolutions. One of the top things on most of our lists is to try to eat a little healthier. So what better way to start the year than with a fresh goat cheese and tangelo winter salad with creamy dressing? Tangelos are a winter citrus fruit that, depending on where you live, are in season between December and February, peaking in January. So you should be able to start spotting these at your local grocery store. Tangelos might look like an orange, but they have a much more sour taste, which is not surprising given that they are a hybrid of tangerines and grapefruit. Goat Cheese and Tangelo Winter Salad - Ahead of Thyme Sweet, tangy goat cheese offers a creamy contrast that pairs with and plays off the tangelos amazingly well. They're paired together with crunchy, thinly sliced radishes that add a pop of color as well as a slightly spicy bite, which is why a creamy dressing works really wonders here. What I love about a salad is that they are completely customizable. You can switch up the greens, the fruit and the dressing and you have something completely different. You can also add some protein to this tangelo winter salad. Arugula Citrus Salad This tangy arugula citrus salad with a quick grapefruit vinaigrette is a simple, refreshing side dish. The recipe combines arugula (or any lettuce) with orange and grapefruit wedges. It incorporates orange juice and grapefruit juice in a tangy vinaigrette, the perfect blend of sweet and savory. The crumbled goat cheese adds a touch of creaminess, while the pink pepper deliciously contrasts the sweetness of the oranges. Winter Goat Cheese Salad with Orange Vinaigrette This winter goat cheese salad with fresh orange slices and pomegranate seeds is a nutritious way to add some color to the colder months. The contrast between the creamy, tangy goat cheese and the crunchy roasted hazelnuts is complemented by the orange vinaigrette. Sending you peace, health and all good wishes.
  23. This is what fits in the laundry bag: 2 long sleeve dress shirts, 2 short sleeve dress shirts,1 pair athletic shorts, 2 pair yoga pants, 4 pair jeans, 1 tshirt...12 pair socks and 12 undergarments folded in a basket. HAL does an excellent job with laundry!
  24. I have never seen a laundry special. We do by the bag; it was $35 on our TA in October. It is amazing what you can get in one bag: 2 long sleeve dress shirts, 2 short sleeve dress shirts,1 pair athletic shorts, 2 pair yoga pants, 4 pair jeans, 1 tshirt...12 pair socks and 12 undergarments folded in a basket. HAL does an excellent job with laundry!
  25. Salmon and Broccolini with Citrus-Chile Sauce is a Bon Appetit recipe and you know what that means…it’s behind a paywall. Let’s start by talking about one of the key ingredients. I think that we are all familiar with salmon but what about broccolini? Broccolini is also called “baby broccoli,” but the name is a slight misnomer. According to The Vegetarian Flavor Bible by Karen Page, broccolini isn’t just miniature broccoli. Instead, it’s a cross between broccoli and gai-lan, a variety of Chinese broccoli. Though it tastes similar to broccoli, its flavor is milder and sweeter. It has bright green florets and long, slender stems. It’s also easy to prepare and incredibly versatile. And when you cook it well, the florets and stems have a fantastic crisp-tender texture. I managed to find the Bon Appetit recipe on another site. Salmon and Broccolini with Citrus-Chile Sauce I like that the citrus is grapefruit, not the usual choice. It will be a bit spicy with the jalapenos. Baked Salmon with Spicy Citrus Dressing Roasted salmon with a delicious, slightly spicy, citrusy dressing, served over fresh spinach and arugula. No reason you couldn’t serve it over broccolini instead of a salad. Sending you peace, healing and all good wishes.
