I doubt there will be much "Spring Break effect" sailing from New York.

There will be with regards to pricing.  While there will not be the typical booze cruise shorter cruises from there, it is a peak family sailing time and the prices will (in many cases) reflect that.

 

And to echo your comments to the OP, Spring Break can typically be anytime between early March to early April.  I know that many of the Universities around us (Eastern PA) have their Spring Break this year in mid-March while some of the High School districts are in early April. So it is over a period of time - not a specific week.

At the college/university level, spring break is all over the calendar and often relates to the midpoint of a semester or trimester as well as the hold outs that go for the "traditional" Easter week (though even that can vary between pre and post Easter Sunday.

Pre-Easter is the usual choice of public school systems while post-Easter is preferred by Catholic school systems.

Many primary/secondary schools still tie the break to before or after the ecumenical Easter which is April 12 in 2019.   Colleges tend to be more flexible in their scheduling.     Our state colleges here (NC) break on March 8 in 2020.
