On early deck plans, there is a space labelled that just forward of Sabatini’s. It’s noted as “360 Restaurant”.

We have had dinner in that space before, we had a group of 12 for a birthday party.  It is just a "private" dining area for Sabatini's.

How was the sound? I'd imagine people talking at other tables in a round room would make for an annoying din of sound bouncing around while trying to talk at your table.

The sound was not a problem.  There is lots of separation from the main dining room.  There is only one, large round table in the room.  The table could probably seat 16.

That’s probably it.  They will have enough staff to open it?  Did it rotate 360 degrees?

If that was on the deck plan then it probably is a restaurant.  But with all of the fanfare I had been thinking that it might be a Cirque du Soleil type show.

No, the room did not rotate. And, the room is not that big to accommodate anything other than the diners at the one table.

They may have used it for that in the interim, but I recall seeing a rendering of something that looked like what the event industry would call a “black box”, a space that can be dressed up to whatever you want it to be, using video and audio to create unique experiences. They did something similar in the Japan Pavilion at Expo 2015 in Milan, and Celebrity is as well in their new version of Qsine.

Following on from Dunk's suggestion. Yes, tere was something in an old thread where we spotted something new on pre-launch video of Enchanted Princess - some guessed it might be a kind of immersive dining experience in that area of Sabatini's
