We'll be staying at this hotel in October and know about the IHOP & Red Robin restaurants near it but what restaurants are in the mall?

NJ is a decent sized state, with more than 1 Hampton Inn. Care to be specific?

I assume you're staying at the Hampton Inn on International Boulevard that's adjacent to The Mills at Jersey Gardens. The mall's website lists what's available,  which is mostly fast food. AFAIK,  Red Robin isn't one of restaurants there.

Ruby Tuesday & IHOP are the restaurants close to the Hampton.
