You have to keep it mind that not all servers accurately report their tip income, which skews the results in the first place. I only worked at a chain but I witnessed servers more often than not underreporting their tips (knowing what I made in the same amount of time and they claimed less than half of that). Also in consideration is that most servers don't actually work 40 hour weeks. If so, I would like to see the source of your information. At $15.50/hour, a person working full time at minimum wage is making over $32K per year. I would like it better if employers keep the employees whole, even if that means a price increase. Then we drop the tipping expectation. Tipping is expected by the industry and the State to make up the rest of your wages.
