Perhaps but Luminae is open for lunch. 

The queue for breakfast at 8.55am is so long. But I suppose if they extended breakfast hours then the people would just go later anyway!

YouTube does all types of "how to" topics for free.  Unique hands-on classes like glassblowing are available on some ships and are quite popular.  Others include casino game classes and the bar classes like whisky tasting.  All with a charge.  I agree that a cruise-related or unique hands on class would make money.

Maybe some type of elevated trivia with something at stake (like good prizes)?  The usual trivia games for free.
