Yes. Daily gratuities will be charged against your account. It will first be deducted from your non-fundable(given to you by Celebrity) OBC. If there is not enough non-refundable OBC, they take it out of your refundable OBC. Then, your credit card may be charged.
I am able to improve any burger by adding grilled and fresh onions, lettuce, tomatoes, cheese and lots of condiments. Actually, I thought the hot dogs were actually pretty good at the Mast Grill.

The OP must have a very low bar for pizza and burgers. I thought those two areas were the weakest. Other comments were spot on. Outstanding food at the buffet and MDR.
If you want a certain day and time, then book individual restaurants and forget the package. You could snag a deal on the ship but the times are less desirable to us.

I am happy you found Starlink as being dependable. On our cruise in the Caribbean, FaceTime did not perform well even on the Premium Plan. Even emails with photos were not consistent. It may be due to the ship's location.
I found the dress to be rather casual. Few cruisers dressed up. Alot more casual than the Caribbean or Europe. It was also rather cool in the ship so dress accordingly.
As for locally sourced food, there was an fish night leaving Juneau. There was fresh cod, halibut and salmon available at the Oceanview. It was delicious and cooked to order.
You may want to first do some math. If you exceed the allotted amount for the Classic Package, you just pay the difference. For example, if a drink costs $14 and you allowed amount is $10, you would pay $4 plus 20% which end up $4.80. Figure out the difference between the Premium upgrade and paying the overage.
Do you get an emblem that you can have sewn on your sweater, blazer or tuxedo that says "Elite", "Elite Plus", etc.? And do you get a FREE Celebrity blazer when you reach zenith? 😀

When you received the receipt at the end of the meal, there was a statement that indicated that an 18% gratuity had been included. This was before the increase in price and the 20% add on upon checking out online.
If I buy a glass of wine for $10 and there is a 20% added gratuity, I believe that goes to the drink staff.
20% is a fair tip for a meal. If you want to add more, it is solely up to you.
We have met cruisers from Luminae who were dining in Blu. It was mentioned that they did not care for the service or food in Luminae. I was surprised to hear that. They liked the more quiet atmosphere in Blu. I think the key is to arrive at a less busy time and the chances of being seated without a lengthy wait would be improved.
If you go on a cruise expecting to be disappointed, then guess what will likely happen? Cancel and choose a ship that you are looking forward to. You stand a much better chance of having a good time.
Don't waste your time and money bidding up. Move on.
They do hold back some days/times for those that have already booked dining packages. On our cruise, there was a cancellation list being kept at Eden. That was an option that we used with success.
I had spent a good deal of time making reservations for different MDRs. When we got there, we were told there were no reservations and it was Anytime. If we got there early, there was no wait. However, it got busy around 6:30ish and we had to wait, return or try a different venue.
