is it still possible to exchange the elite cabin bar set up for the coffee cards please?

Yes, they will put 2 coffee cards on your cruise cards, one each

Is the 'elite' mini bar setup any different from the SUITE mini bar setup?

It is the same, but elite + suite = 2 mini bar setups.

The difference for us was that we continued to get bottles of water each day when we were in a suite. I usually trade some of our cans of soda for extra water.

When you trade in Elite mini bar for coffee cards on a medallion ships are the coffees automatically added to medallion or does it take a while before you can use coffee cards.

Hi.  Am not finding precise answer on this one and I forget.  Two Elites booked in two cabins each get one Mini Bar setup.  What about two Elites booked into the same (one) cabin (non-Suite)?

Forget it.  I found it - ONE setup per Elite STATEROOM.  Like SH benefit.
