I fold them, place them in a 2 1/2-gallon zip lock bag, and sit on the bag to let the air out.  Keeps everything dry in case the bag sits out on the tarmac during a rainstorm - been there, done that, clothes stayed dry even though the bag was wet inside.  

 

I even manage to fit my sports coat inside the zip lock bag.

I do both. It depends on the item. I roll and use packing cubes for underwear/socks/bathing suits, and for t shirts, shorts and capris. For dresses, shirts/blouses, long pants and jackets I either fold or use a modified bundling method. The trick is to use the straps to snug everything down when I'm finished packing. It's often the moving and shifting around during  transport that results in the worst wrinkles.
