They'll charge your vouchers by default but you certainly can ask them to charge it directly and save the voucher.
I've had the opposite, ordering a bottle of water at the end of the night and the bartender confirmed that I actually wanted to use a voucher for water (which I appreciated, actually)
It depends on how many kids and their age ranges are on a particular cruise. But you can certainly request they be kept together.
Some ships do have video games, but it varies what and how many consoles in AO
My lactose intolerant wife has eaten it without issue. Maybe they've had to switch vendors lately, but it's worth asking to see the label on the soft serve mix next time
