I assume oil & vinegar are some of the dressing options at the tutti salad bar. Can anyone confirm if the oil is olive oil?

This is the type of thing that can change cruise to cruise or even day to day, so it's best to ask onboard, right at the Tutti Salad table.  They will fetch the Chef if you ask.
