I use 1/4 cup lemonade and 1/4 cup regular cream to every cup of SR flour. They freeze very well, and they just need a quick zap in the microwave. I just gently pat the dough into a long very fat sausage shape, then cut into discs. Too much handling of the dough makes the scones tough.
