I only flew twice for cruises.

Our primary had our next blood test checked, and we both had the virus!

Having seen the ravages of shingles in friends, we both got the Shingrex shots and had no bad reactions. 
I was a little queasy after the first one, but that was gone by bedtime. 


I'm guessing you wrote this before seeing my later post where I explained that my doctor didn't believe me and checked my titers, only to discover that I was correct and I had never had chicken pox.  I've since been vaccinated, but still don't need to worry about shingles.

Mimi I’m very sorry for the loss of your two dear friends. Similarly, the younger sister of my best friend from high school passed away suddenly last weekend of a heart attack. She was 63.

Tried @Lionesss Recipe................It was very good, mine turned out more watery though, not sure if that is the way it is suppose to be or not.

 

It more was like a Keto, Chicken Parm without the pasta (carbs) Not sure if all the water came out of the ricotta, spinach or peppers............but still was very good, made a nice flavored tomato cheese soup mixture.

 

Here is a few pictures before and after it was cooked............if I show you after it was ate, won't be much in the picture. lol  Again it was very good.

Glad to hear you had a great 2 weeks. I imagine you got the work related internet issues worked out this time.  Looks like we will have a cool day tomorrow with rain showers.  I honestly don’t even care!  Hoping for better weather at Pt Canaveral, CocoCay & Nassau.  
Packing is complete and I’m currently enjoying a margarita and listening to salsa music via Alexa.

I was just checking out weather in bayonne.   I hope it's not raining for everyone disembarking and for everyone embarking.      Fingers and toes crossed weather man is wrong this time.

Yes, our new VPN worked great.   In fact, internet overall has been very good.  Helps that we had great weather for the satellites.

You will have an amazing cruise.    Plenty of Mint Leaves.     

 

FYI, the bartenders in Vintages make Horrible Mojitos - do not go order there!

Vintages makes great martinis.

 

If you go to Rajesh in Casino Bar and tell him Debra (yes they use my name from passport) from past 2 weeks sent you - he makes the Best Mojitos on the ship.   

The bartenders at pool bars are in 2nd place.     Elvis at Schooner Bar is another favorite. 

 

Have a wonderful cruise and if you get the chance pop in and let us know how you are doing.    😍

Thank you!  Happy to hear you had two great cruises.  Thank you for sharing.  This is our first rccl cruise since 2/2020.  We did cruise on the celebrity edge last September and had a fab time.   We are back in may on the oasis and can’t wait.

I was a nervous wreck even with them up by 10. I’ve had my heart broken plenty of times by KU. It will be a very tough gamer on Monday whether it’s UNC or Duke. Just glad they are still playing. Gotta run more beer to drink!!

I was thinking about how this recipe would turn out.  That if you bake the chicken raw in the oven, it will come out with a lot of water.  That's what happens when you cook raw meat in the oven.  It produces a lot of water.  What I would do is after stuffing the chicken breasts, is to carefully pan sear them in olive oil over medium high skillet for 5-7 minutes each side until the outside is golden brown.  Then place the stuffed chicken breasts in a  baking dish.  You can then pour the spaghetti sauce over the chicken along with the bell pepper and mozzarella cheese and bake for 15-20 minutes or until chicken is done.

 

Pan searing the stuffed chicken will give you much better result.  I would also try seasoning the chicken with Weber Beer Can Chicken Seasoning.  This will enhance the flavor along with the pan searing.

I think pan searing the breast all the ricotta would melt out of it...........The breast aren't really stuffed, the ricotta put on the breast and I rolled the breast around the ricotta.

 

We make kind off the same recipe, but using stove top stuffing rolled into a raw chicken breast and then pour gravy over the chicken breast and then bake and never get as much water added to the gravy like I saw today........

 

 

I'm thinking it was either the part skim ricotta or  fresh spinach I used that had all the water........ I only poured about 16 0z of red sauce on the chicken breast today. Really weird how soupy it got.

Thanks Debbie, we will definitely hit up the casino bar.  I’m Debra too so hopefully Rajesh will make me one of your special “Debra” mojitos!

I was rooting for KU for my 2 former friends who are KU grads and my former co-worker who grew up in Kansas and graduated KU.

I am rooting for UNC tonight
