thanks ladies!

 

There is a fire about 30 miles away (stupid person with fireworks started the brush fire).  Woke up to lots of wind, bring the smoke up from the fire.  Then, we get some thunder boomers and some rain (I call them "drive bys" because they maybe last 5 minutes).  Now, it's humid up here (VERY unusual) and it smells like someone doused a campfire with water.  Lovely.  

 

I have never heard of that eggplant.  Looks pretty good.  The sweetness appeals to me - usually eggplants seem pretty bland to me, no matter how they are done.   I think I'm going to do a "what do I have in the pantry or freezer" meal tonight,.  Don't feel much like cooking, and I don't feel like going for takeout.  And I sure don't feel like Domino's (the only delivery we have!)

 

Let's see what tomorrow brings!!!

Cruise Kitty, thanks for checking in.  I'm well but have been busy between trying to get central a/c in our house, gym opening, son's pre-season soccer practice.  Plus I'm trying to ease back from social media some.

 

Kat, glad to hear your eye is getting better.  Your outfits were both cute, loved the necklace with the tank dress.

 

Melody, try not to overdo.  Glad you can enjoy a brunch with friends.

 

Lois, the eggplant sounds interesting (and my kiddos watched Veggie Tales when they were little so I think they can be cute 😉 ).  Is eggplant to be firm like zucchini or have more give/softness to it like a ripe peach?  I've never been a big eggplant eater but trying a lot of vegetables again.

good morning all!

 

Lois - I just saw on TV that the JAX Mayor (or city council) just put in effect a mandatory mask rule.   THAT should be interesting if it stays in effect when the Convention comes to town!!  I know it's still a  bit away, but I hope you plan on stocking up on food & beverages and just staying at home when it shows up!!!  

 

We had a LOT of wind yesterday afternoon/evening.  There are some places where trees were downed - I watched the trees in my backyard sway and bend, but fortunately they survived.  There was a prediction of snow overnight, but it looks like it didn't materialize.   Otherwise, it's a cool (in the 50s), dreary day.  

 

The eggplant.  Way back, I was taught to put the eggplant slices on the wire "cookie cooler" thing and salt them a little.  It's supposed to suck out some of the moisture that makes them mushy when you cook/bake them.  But, they still taste bland.  Every once on awhile I see Japanese eggplant at Whole Foods - they are smaller and longer than the usual eggplant.  Maybe I'll try them.  As for firmness - I've never really noticed one way or the other.   

 

OOTD:  it's a gloomy day, and it being Monday, I have no desire to do anything but couch duty.  So, for now, it's my sweatpants and a long-sleeve Tshirt.  I really do have to go to the store sometime today (I've delayed it for 3 days), so I'll have to do something a tad less "lounge-y".  

 

Cruise Mom: Stop working for a little!!!  You're making me feel guilty for my sloth-like behavior!  Please take some time out to just relax.

Hi, I was out for a while this morning (wearing a mask).........and I had no idea the City Council passed that mandate!

I have no idea what the Mayor is going to say but I am sure it will be on the evening news. 

 

PAcruise.......the eggplant is usually better on the firm side yes, but not hard as a rock.  When it cooks it gets softer.

As for being bland? I guess it is if you don't do anything with it but as a parmigiana....add as much garlic/spices/etc....as you like. It can be very flavorful. (in my opinion).

 I have made it roasted with other veggies as well......with various herbs/spices/olive oil.

It tastes good to me😀

****the texture of the eggplant**** PA, you had asked about it being closer to a zucchini or a peach? well, sort of 

in the middle LOL........I do know once you cook it, it softens up........so you don't want it too soft to start with or it will

become really mushy........

Happy Monday Ladies!   I'm attempting to grow some eggplant,   however, I"m afraid it's going to end up as fodder for the growing community of squirrels ;)  I counted 5 little babies this morning....  going to have to check how many weeks till they are old enough for me to remove the zucchini so there is enough room for the pumpkins...  Lois I love eggplant w/olive oil & cheese :)  Had fun paddle boarding yesterday,  I did it for hours, & DH slept on the beach...  going to visit the local hispanic market in a bit & get some take out soup as it's a bit cool & gloomy today :)

Cool days definitely call for soup 🙂 

 

Thanks for the advice on eggplant.  I've seen some at my local Aldi that usually has good produce, but the eggplant always felt soft and I didn't know if that was normal (very dark too).  I remember my Grandmother making it years ago and hers was the only dish I even somewhat liked as I typically find it too soft - so I was hesitant to purchase some that already had a lot of give.

Good morning😀....regular eggplants are VERY dark....that is the color as well as the name😀....the new one I bought is the only one I have seen with the striations running throughout the skin.

 

Well, our new mandate is in place and it has the Mayor's ok.... it is for anytime you are inside.  And if you are over

6 years old.  So outside it is not mandated.   And a letter was written to the Mayor's office signed by over 500

physicians asking him to NOT accept the RNC convention......of course the Governor would not answer the question

yesterday about the safety of nearly 20,000 people being inside an arena not wearing masks.😧

It's a cool and gloomy day here in the Wasatch.  I think it was cold overnight - I had to grab the bigger comforter in the middle of the night.  When I looked at the thermostat at 9am, it was 56 in the house.   I may make some "kitchen sink" soup today - whatever I can find in the kitchen.  I know I have chicken broth and beans and corn, so that's a start!

 

I discovered that my County's mask order goes farther than I knew - it is in effect until September 1!!  Our town has to make a concerted effort to get out to our locally-owned stores and restaurants this Summer because we are all they going to get, outside of a few tourists.  

 

Lois - since your Guv is ignoring Disney World employees and not closing it until they get better procedures in place for the health of the cast members, I unfortunately can't see him going against the Pres and either say "no" or putting restrictions on the convention.  Saw yesterday that his staff went through the arena in Oklahoma, removing the "keep this seat free" signs the the arena owner had placed.  

 

OOTD:  I refuse to turn on the heat in the house (it's June 30th, for Pete's sake!), so it's sweatpants, long sleeved Tshirt and I'm under my fleece throw.  I may put on a pair of socks to walk round on my slate floors.

Hi Kat, I saw that same thing on the news.....(about the seats in the Arena).  I think, unless something changes

drastically in July---which is tomorrow......I actually hope the Mayor would speak up on behalf of the city. 

I know I now am going to sound negative but I just can't see how things are going to get better in 4 or 5 weeks unless

MAJOR, MAJOR changes around the whole country are put in place.  Did you see Dr Fauci's assessment today?☹️

As of today, we are increasing cases by 40,000 per day and he said it could go up to 100,000 per day. 

If it is in that range in August? They Mayor BETTER speak up! 😮

 

And I know the Convention is at the end of August but as fast as this thing spreads?  Jacksonville

has a population of 1 million and it is  supposed to bring nearly 50,000 people here.......God

only knows how many of them are already carrying the virus before they even get here...........

Good morning😃  I bought some whole wheat English Muffins the other day......delicious!  Sliced tomato and melted

cheese is a good breakfast.  I can't remember who suggested it, Cruise Kitty? Was that you? Thanks for that---it is a change up from rye toast.

The Thomas brand has a 100 calorie wheat English muffin that’s very good. Try it toasted with tuna & a slice of cheddar cheese broiled on top. Delicious. Can’t wait to be able to have one. I’m up to creamed chicken & beef pot roast is in menu for tonight. Can’t wait!!!

Baby steps!!  Nice to see the food intake improving!  I've turned into a sloth - not much in the fridge, don't feel like going to the market.  Good thing I have some yogurt in the fridge!  I was having some stomach issues last night, so I made some plain rice.  That still didn't help - I woke up in the middle of the night with that "pre-barf salivation".  When I do want english muffins, those Thomas 100 calorie ones are what I do buy.  

 

Eye update:  the vision is clearing up a tad.  BUT, now I've got a ton of "floaties" going around in the eye, making it everything from annoying to blurring up.  I have a permanent floatie in my left eye - I know it's exact shape - and I'm used to that one.  But, there are way too many of them in my right eye.  I go back to the ophthalmologist Monday.  I sure hope these go away!!

 

OOTD.  I have to get un-slothed and hit the market.  Depending on my eyesight, I may venture down the mountain to Trader Joe's.  I'm getting tired of the food offering here in town.  If I do, I'll put on a pair of leggings and a long-sleeved Tshirt as it is still cool up here today.  Accessories will definitely include a baseball hat and one of my many pairs of Blenderz polarized sunglasses.

good morning everyone !  Melody & Kat, glad to hear that are both slowly improving :)

 

glad to hear more states & counties are slowly requiring masks, but hope it's not too late...  all our beaches will be closed this weekend, kind of bummed, as I had planned on going paddle boarding, or taking the boat out to watch fireworks, but all fireworks shows are cancelled as well....so will stay home & work on garden...  or as I now call it, the local wildlife grocery store ;)

Oatmeal is OK.  When I'm feeling like a little "stick in my belly" breakfast, I'll do it.  Right now I have an "instant" steel cut ('cars I'm too lazy to do them in my rice cooker/oatmeal cooker).  They are only 22 grams with flaxseed.  I can add a little fruit or some peanut butter and be a happy camper.  

 

CK: isn't there some place down on Alamitos Bay where you could launch without a beach?  I vaguely remember someplace where we started windsurfing.   I heard Gov. Newsom also said no indoor dining for 3 weeks.  Gotta do whatever needs to be done for this!  Me?  I would not be upset with a 3 week "Stay at Home" again if it would help.  But, then, I've been doing the "stay at home" anyway.   We have absolutely nothing going on up here.  But, our neighborhood kids are organizing a little "parade" around the neighborhood.  All the adults will go out with our adult beverages (as we do every holiday gathering) and cheer them on.  

 

I got all ready to go out - went to my mailbox.  Fuzzy enough vision to say "no" to the drive to TJ's.  I'll have to make due with Whole Foods and carryout.  I have about a 20-ft no-fuzzy field of vision right now.  

 

Lois - I saw some photos of sunrises/sunsets from JAX with the dust - really pretty and different!   But, it screws up the air for you to breathe.  Be careful.

My ophthalmologist is a uveitis specialist.  We will redo the slit light exam again.  Depending on what she says, I can ask for another of the opths there if it might be a separation.  there is also an injection I could get to help - she wanted to wait to see if the pills and drops cleared it.  So, that might be the next thing.  Thanks for the idea.  

 

Hey, if I had a hubby who made eggs like your DH does, I'd eat the every day, every meal!!!

Hi Kat, they closed the parking lots, so that pretty much shuts us down... bunch of other stuff is reclosing as well,  I honestly haven't looked at the list...  the mayor is speaking right now about what will shut down in LA county (in addition to what the Governor announced)  

 

the kids parade sounds so cute!   Our neighborhood has a couple of annual 4th of July block parties as well as a huge pancake breakfast at one neighbors, we always look forward to that...  it's cute, they dropped off the usual invitation yesterday, but it's dated for 2021 :)

Good morning girls, Kat, hope that eye gets better!!!!!!!!!!!!!

 

It seems my glucose number is much better now in the mornings than it originally was🙂.....I have a feeling cutting

back on the carbs in the evenings (dinner) is a big factor.   I know that nutritionist had said to eat 45 grams of carbs

every meal but if I am being totally honest I have not done that and no reason to say otherwise.  

 

I haven't cut out the carbs totally but I know they are what turns to sugar so I have been just eating more proteins, 

veggies and the starches? Not so much anymore.  I really felt like ordering a pizza the other day (haven't had one

in many months) but I thought better of it..........I guess one slice wouldn't be so terrible but if I buy a whole pie?

I could eat 3/4 slices in one sitting.............😲

Hey Lois,

 

I quick word on the pizza. Do you have a Marco's up there? They've started doing crustless pizza. I haven't ordered it yet but I've seen the ads and the mail flyer. Basically, it's a everything that would normally be on a pizza in a pan. I believe that they literally just treat the pan itself like crust and make up the "pizza" and bake it to get the cheese etc to melt into the toppings...the ad shows a fork for eating.

 

I think I am sensitive to wheat...I get GI issues when I eat too much of it. I debate over the years if that's a sensitivity or is it one of those semi-addictive type things that happens when your gut flora is out of control and feeding off the offending item, making you want more and more and then bam, GI issues. Is it a true sensitivity or is it a bio-chemical imbalance that could be righted? That's another issue...but the POINT is that I have gone wheat-free and gluten-free at various times over the years and when I cut that out, what I find is that I start to crave "mixed food."

 

What I mean by that is...without a bread-like component, a lot of my simple meals like sandwiches (all kinds, especially things like hamburgers), flour tortilla tacos (sorry, but egg tacos are a FAVE and they just don't seem to "go" with the corn tortillas as well), and PIZZA!...what I am really wanting is to eat something where all the different components of the meal aren't readily identifiable. I want that all ooey-gooey, all mixed together bite!

 

I see the Marco's ads and I think to myself...well that would be easy to do at home... And so I haven't tried it. But maybe take a look? And maybe do a search and give it a go to help satisfy that yen. I know when I try to ignore a craving, it only makes it worse...LOL.

I just found it.....it is called a PIZZA BOWL........looks like a casserole dish. And the pictures

look good too.😃 It says "Crustless Pizza".    I will have to give it some thought---it may a good way

to satisfy the craving.
