Good morning.  Thanks for the Fleet and Daily Report.

 

It's still dark.  I couldn't sleep.  We've got a chance of rain today.

It's my mum's 85th birthday.  We spent yesterday afternoon with her.  Had some prosecco and cake.  We had take out Chinese food for supper.  Bertie chased the squirrels from her yard.  It was a nice time together.

 

I haven't had a milk shake in years, thanks for the suggestion.  I don't play many video games.  I encourage everyone to have a wonderful day

Love the quote.

I love roast chicken especially with mashed potatoes and gravy.  Yum.  

I hope the drink is tasty.  Not sure about a wine with "vulture" in the name.

Good Morning Everyone, thanks for the daily fleet report.  Today’s meal suggestion is a favorite here.  I’ll probably wait until the weekend to make it since we had chicken last night.  I’d like a good chocolate shake, haven’t had one in a long time.    I hope everyone has a nice Monday.

Thank you for the Monday report, Rich.  I'll certainly celebrate Encouragement but pass on the other 2 days.  Love the Wilde quote and roasted chicken,  Been to Laem Chabang twice, boarding Queen Victoria there in 2010 and as a port of call on MS Zaandam in 2012.

Thanks for our Monday Daily, Rich.

 

I’m going to try to start the week off right by posting but warning - it’s a long one. 😝 

 

I’ll happily celebrate the day of encouragement.  Many people need it.  Love today’s quote and chicken sounds like a good idea for dinner to go with all my other leftovers.

 

My sister and BIL came down for a visit for a couple of days so I decided to do Jose’s Celebration of Life while they were here and could help and share the memories.

 

Both of my sweet sisters gave me flowers for the occasion

I put them to good use on the two tables.

 

My sister & BIL were shocked when they arrived Saturday morning and saw I already had the tables set up.

 

For the buffet - each silverware setting was in a plastic bag and wrapped with a serviette for safety.

The pergola just needs the ice bucket and the liquor & red wine added.

We had a very good turnout - about 38 people.  We really had more chairs than shown - a lot just like the pergola 😉

Blue Lagoon Cocktail:

 

Ingredients

1 ½ parts Pinnacle® Citrus Vodka or Pinnacle® Original Vodka
½ part DeKuyper® Blue Curacao
Fill with lemon-lime soda
Top with lemonade
 
 

Instructions

Add the Vodka and Blue Curacao to a tall glass filled with ice. Fill with lemon-lime soda and top with lemonade. Stir and serve.

Good cloudy and humid morning. More rain later today.

I had a chocolate milkshake yesterday from my favorite roadside stand . Next Sunday is their closing day for the season, I already have 2 half gallons of ice cream in the freezer.😃

Good Morning from a warm and sunny day at the beach

    A chocolate milk shake would be great. Dont play video games. It is always a good thing to encourage someone.  Love roasted chicken, it is one of those comfort food meals.

       @kazu   Your tribute looks wonderful. I hope that your friends and family can begin to bring you peace.

         I had the "new" booster on Saturday. It kicked my butt. I have never had a reaction to a vaccine . My family received it on Friday and was fine. I woke in the middle of the night with a wicked headache and chills. THe overall achiness lasted most of yesterday. Feel fine now and glad I got it. Just surprised at my reaction.

          Off to water aerobics.

Good morning, everyone!  

 

@kazu You really put your all into the Celebration of Life for Jose.  I know he must have been up in heaven just beaming down on you.  Thankfully your sister was there to help with the clean up and work involved that day.  I would have happily acted as scullery queen if I had been there.  

 

Today the photographer comes at 10:30 to take pictures for the listing of the house.  This has been a ton of work!  I am taking the rest of the day off and then tomorrow I'll go back to packing in anticipation of a sale and a purchase.  We did counteroffer on the house in Midland and haven't  heard anything.  I don't expect to hear anything for a few days as they had an Open House yesterday.  

 

Today's meal reminds me of Sunday dinner at Grandma's house.  Roasted chicken, potatoes and vegetables roasted with the chicken, gravy, the whole works.  In a way that is a comfort food because of all the memories it invokes. 

 

Rotisserie chicken is one form of roasted chicken. Originally Rotisserie Chicken appeared in France during the Medieval period. Grilled chicken was a favorite for King Richard the Lionheart during the 12th century. At this time it was made as a stew. The appeal of rotisserie chicken is the roasting of the meat using spit skewers. The “spit” is a metal rod that went through the whole chicken, which then would be rotated and cooked slowly over a heat source. Rotation of the meat allowed it to be cooked evenly, within rows by the heat radiation. There were records that the first rotisserie was turned by dogs, then it went onto steam, then clockwork. 

 

 

For centuries, the British were famous for their roast meat, attached to a spit before being hand-turned by some poor soul in front of a devilishly hot fire. We no longer do this, today we cook them in the oven, so technically they are baked meats not roasted ones. Searching for historical recipes for roast chicken is rather tricky: they were rarely roasted – they were a dependable source of eggs after all.  

 

When you do find a recipe, there is little focus on the roasting itself. Check out this recipe for ‘Chicken Endored’ from around 1450:

Take a chicken, draw it and roast it; let the feet be on and take away the head. Then make a batter of egg yolks and flour, and add to it ground ginger and pepper, saffron and salt, and spread it over until it is roasted enough.

 

By the eighteenth century, there is little more instruction, but we do at least get a cooking time:  

To roast young chickens, pluck them very carefully, draw them, only cut off the claws, truss them, and put them down to a good fire. Singe, dust and baste them with butter, they will take a quarter of an hour roasting. Then…lay them on your dish.

We can only assume that the roasting part of the process was already in the readers’ skill set.

Good morning friends!  It's a lovely sunny morning here and our extended forecast shows lots more sun all this week.  Slight chance of a shower today then we're good for a while!  

 

Thank you Rich @richwmnfor today's Fleet Report and Daily.  I can  celebrate chocolate milk shakes though I haven't had one in a long time.  Never was a video gamer. 🤪  I really appreciate a day of encouragement because we can all use that.  Nice quote but sometimes you can't help who you love.  Finally, a dish I can figure out without searching on Duck, Duck, Go!  Thanks Debbie @dfishfor those gorgeous photos and delicious recipes of the roasted chickens.  Fingers crossed your offer is accepted in Midland!   Thanks for the drink recipe Dixie @summer slopebut probably a no to the drink (and wine) though.

 

Laem Chabang (Bangkok), Thailand is a new port of the day for us, amazingly enough.  We began a cruise from there in 2010 on Diamond Princess, and stopped on another cruise on Diamond Princess in 2013, but that time I was ill that day and we stayed on the ship.  It's quite a distance to Bangkok from Laem Chabang.  I'd be interested to hear if anyone has every really visited the town of Laem Chabang, since most of us would want to head to Bangkok I would think.  I'm sure I have a few photos of our 2010 visit and will put some together for you.

 

Jacqui @kazuwhat a wonderful Celebration of Life you had for Jose!  There was quite a crowd of people happy to attend, I see.  The tables were all beautifully presented and arranged.  How sweet to send home some of your delicious jams.  I hope you had someone to help with the cooking (besides the beautiful cakes you mentioned), or did you get some dishes catered?  And by the way, that is the largest deck I've ever seen.  Perfect for your Celebration!  Thank you so much for sharing some photos.❤️

Rich thanks for the report and Roy for your Care and Celebration post. I’m enjoying my morning coffee and then it will be time for my walk. It actually may not rain this morning after receiving around 5 inches throughout the weekend!

Being Monday means it’s laundry day. We cleaned out closets this weekend and have approximately ten large garden bags of clothes for Waterfront Mission’s neighborhood pick up tomorrow.

Have been to Bangkok but those pics are on old slides somewhere in the attic. Another box that needs to be tossed.

Good morning to all. I sometimes feel as if most of my day is spent encouraging people and will celebrate that day. I have never enjoyed video games or chocolate milkshakes. We have not been to Bangkok but would love to see pictures.

@kazu, Jacqui, I enjoyed seeing the pictures of your beautiful outdoor space set up for the Celebration of Life. I am glad your sister and BIL were with you as it had  to be both a happy and a sad occasion.Did you make all the food?

After several nights spent at this hotel, we rode a Princess transfer bus about 1 1/2 hours (maybe 2) to Laem Chabang.  Unfortunately after about 10 minutes the AC on the bus broke down, and we suffered terribly along the way.  They had to stop to purchase cold water to hand out.  The windows would not open so it was sweltering inside.  We must have all lost 5 pounds!  Princess refunded us our charges for that transfer which is only fair.  Here is Laem Chabang, taken from the ship.00-krGnVk_TmW1vjXOSXmrbNCgtIzRKIF36hrdhGheqtVLczyySCV-QPWv68UTGQghwqCe7ffHDJpwno-pEcjtJnw?cn=THISLIFE&res=medium&ts=1615995869
