It's just like a salty sweet sauce. Thick like syrup. Usually it's saki, mirin, white sugar and soy sauce or some similar combination. It's great on grilled veggies but typically served on an eel roll.

Think of it like A1 Steak Sauce, it is sauce for the steak but does not contain steak.

 

This is just sauce normally used for eel, but does not contain eel...

It is one of our favorite sauces with sushi, so will be trying that new addition if it is available when we're on Connie in Dec.

 I always ask for a double side of English bacon when I order Eggs Benedict for that very reason.

I just asked for sufficient to let them put two poached eggs on top and they took care of that for me.

 

The sausage was another matter though, the Luminae kitchen only had the typical US tiny breakfast sausages, they were willing to go fetch the 'British' bangers from the OVC, but I didn't want them doing that every day so I managed without, or just went to OVC for breakfast. Now it seems even those tiny sausages are missing from the menu.

Yes, that's pretty much what i did with my hash!

I have to agree -   Their trout is good and I usually order it was sauce on the side just to taste.   Not a fan of the sauce.

Seems like the revised Luminae entrees are skewing towards Asian influences as we have two examples, a fish with a Japanese Eel Sauce and a Duck with a Chinese Cha Siu BBQ sauce.

Just talk with your waiter and tell them the portion size you would like.  They are pleased to accommodate.

 

I often order an Appetizer as a Main Course.   My favorite is the Steamed Muscles (starter) and is perfect as a dinner portion side.

Can anyone say whether the Lobster Roll now contains any lobster?  It was a huge disappointment last fall on the Edge.

One of Iain's top peeves is their liberty with misleading names of dishes.  An example is the Guinea Hen -  which isn't a Guinea Hen and is probably a Cornish Game Hen -   the two have a very different body shape.

 

I kidded him and said at least they still have your Guinea Hen.

 

By the way this is what a guinea foul looks like and is the size of a small chicken and is a Game Bird while a Cornish is not.

My guess is it will be the same one they have had for years.   Will let you know for sure in November.

On SIL B3B in April/May they still had the original Daniel B Menu but on the 3rd cruise they pulled the Tangine Chicken (due to supply chain issues).   It surprised me to learn that it is pre-made by Daniel B's Kitchen and shipped to them in boiling bags... hmmm....so much for the concept of everything being cooked fresh.

I was told that same thing by the Luminae manager on the Reflection after I complained about the chicken being over cooked and dry. I wonder if the new Duck leg will be processed and shipped the same way?  We board the Apex in two weeks and after seeing the new Luminae menus I am looking forward to trying some of the new entrees. The poached cold water lobster really sounds like an upgrade the old warm water one. Even Eden now shows their lobster as being a cold water one. Not impressed with the new Breakfast menu as a lot of the things we liked are missing, but hope we can still ask for them.

Poussin is a young chicken, I think its 28 days, my friends raise these for selling at Farmers Markets and restaurants. They are usually under 12oz so small enough for one.

That is about the size of Cornish Game hens we buy locally. Thanks, so a Poussin is the veal of the chicken world.
