Anyone who has had good prime rib would recognize this is the worst version of it. Someone really needs to ask when they do a kitchen tour. I love prime rib but not the kind I've had on my last two cruises. Wholeheartedly agree with your assessment. Good idea about asking on the kitchen tour. I've only had it once but from memory it was the same colour throughout apart from around the edges where they had browned off the surface prior to serving - which is quite commonly done with sous vide cooked food. It’s a chocolate mousse on the outside with pistachio mousse on the Inside. I like it because it’s some chocolate goodness with a nice hint of pistachio and it’s so creamy.
